Beans are among the most popular foods in Georgia. And it is considered one of the main foods in this country. Especially in West Georgia. With different types of beans they make different dishes. Today we explore a variation of the dish that is quite different from the usual ones. It takes 15 minutes to prepare the dish and recipe we provide is to feed three people.

Ingredients:

• White beans’ can – 400 gr. (2 cans), drained and rinsed
• sesame
• Garlic – 4 cloves
• Raw ginger – 2 cm. root
• Lemon – 1/2 juice and zest
• Olive oil
• Cumin – 1 tablespoon
• Pepper chili, grinded
• Salt and black pepper
• Pitta bread for serving

Hummus with white beans and ginger

Preparation:

Blend the sesame paste, half of garlic, lemon juice, and a little water, lemon’s zest, salt, pepper and about 100 ml of olive oil together and then add all this mixture to the beans and blend again. Move humus into a bowl and make a little hollow in the centre.

Peel the rest of garlic, clean the ginger and cut into the small slices. Heat the olive oil on the pan and fry the ginger, garlic and cumin into the oil. Fry for about 1,5 min.

Pour the hot oil with seasonings on the humus and leave until it becomes entirely cold. Cut the Pitta bread into the shape of triangles and dry them on the 200 degrees in the oven for 6-7 min.

Serving:

Arrange the fried bread in a circle on a big plate and put the bowl of humus in the centre of the plate.
